How to keep cool in hot summer weather? Mung Bean Congee (Soup) is an effective summer remedy that is beneficial for reducing heat, cooling down your body, and relieving heat-stroke, heat rash (Miliaria) and summer boils.

Mung Bean (vigna radiata, green gram, lv dou), according to traditional Chinese medicine, has strong cooling and detoxifying properties. Congee is a type of rice porridge. Mung Bean Congee (lv dou zhou) or Mung Bean Soup is very popular in China and East Asia in summer season.

Here is how to make Mung Bean Congee (lv dou zhou):

Ingredients

– Mung beans 60g (2 oz)
– Rice 60g (2 oz)
– Water 1.4 litre (1.5 qt)
– Sugar 3 tablespoons (according to your taste)

Directions

– Soak beans in plenty of water overnight, or until the beans are softened.
– Place beans, rice and water in a large pot.
– Bring to a boil, and simmer for 1-2 hours.
– Add sugar, and stir.

Note: you can just use mung beans, sugar and water without rice to make a mung bean soup. If you use a slow cooker, or a rice cooker, it may take a longer time to make the congee or soup. You can add more or less water depending on the consistency you desire.

Mung beans can be found in an Asian food market.
