Ingredients
– Fresh shiitake mushrooms 5 (sliced. If no fresh mushrooms, you can use dried mushrooms and soak them in water for 30 minutes)
– Tofu 8 oz. (cut into 1/2-inch cubes)
– Ground chicken 4 oz. (or ground beef, ground pork)
– Garlic 3 cloves (minced)
– Vegetable oil 1 tablespoon
– Fresh ginger 2 slices (minced)
– Soy sauce 2 teaspoons (or according to the taste)
– Salt 1 teaspoon (or according to the taste)
– Water 2 cups
Directions
– Heat oil in a large pot over medium heat, add ground chicken, garlic, ginger and cook about 2 minutes.
– Add mushrooms and water, bring to a boil and simmer for 5 minutes
– Add tofu, bring to a boil again, and simmer for 5 more minutes
– Add salt and soy sauce, wait for 1 minute
– Turn off heat and serve
